Corned Beef

Turning another year older has become more difficult. I try to see the positives ie. maturity, family and settling in to my own skin but I must admit this year i have been numb. Instead i feel nostalgic about my schooling years and also pondered about what home means.

On the brink of a big move, i was intrigued by the properties i have viewed. I imagined my daughter and i on that deck with a gorgeous green back yard, the wonderful summer evenings with friends over home made cocktails- it seemed the aesthetics of a house means little compared to the memories i can see developing.

A home to me means the smell of something baking, the door handle which has a special nudge before it opens, the wood that gives you a jump every time it creaks at night and the mysterious neighbour at the end of the street who everyone has stories about. Needless to say i am looking forward to the move and can't wait to settle in with baked goods and this delicious corn beef with pickles!

Items you need:

- 2 bay leaves
- 1.4 kg corn beef from the market or your local grocer
- 1 whole orange peel
- 1 whole onion outer skin peeled
- 6 cloves
- 1 tablespoons of pepper corns

What's Next?

1. Place the corn beef in a large pot and fill it with water until it just covers the meat. Bring to the boil. Discard the water and place the corn beef in to another clean pot with fresh water till it just covers the meat.

2. Add the remaining ingredients in to the pot and boil for another two hours

3. Remove the corn beef and serve with vegetables or add a few slices to your favourite sandwich with pickles!
