Chocolate and Banana muffins

Clearing out the garage is the last thing on my mind yet i know it needs to be done. Cursing myself for accumulating so much stuff over the years, i'm glad that i managed to box 'some' of it categorically before i fell pregnant.

Sifting through old boxes was like watching my life in flashes. The old school photos which reminded me of how carefree i was, the dress i wore when i met my husband and travel photos of our time in Europe. It seemed not only have i physically boxed these things but with the days rolling, i have somehow boxed them mentally.

That's the thing about memories they are great to hold on to but at some stage you need to let them go to make room for new ones.

Items You Need:

- 110 grams of butter (room temperature)
- 1/4 cup of caster sugar
- 2 eggs
- 1/2 cup of milk
- 1 cup of self raising flour
- 1/4 cup of plain flour
- 1 teaspoon of baking powder
- 1 tablespoon of cocoa 
- 3/4 cup of good quality milk chocolate (roughly chopped)
- 1 banana (mashed)

What's Next?

1. Preheat the oven to 180 degrees Celsius (356 Fahrenheit). Place casings into a muffin tin (serving 12)

2. Using an electric mixer cream the butter and sugar

3. Add the eggs one at a time, beating each egg thoroughly

4. Sift in the flours and mix well. Add the cocoa and baking powder

5. Stir in the milk.

6. Fold in the chocolate and banana.

7. Spoon in the mixture to each muffin casing and place in the oven for 25 -30 minutes, checking intermittently. If the skewer is inserted and comes out clean the muffins are ready to be placed on the cooling rack for 10 minutes before serving.
