Nutella suprise cupcakes with tahini frosting

My rattling trolley down the aisles of my local supermarket was half filled with fruit, vegetables, ingredients for my next cook up and the essential- Nutella!


Forgive my frosting skills, i'm still green at this. Honestly, i was too busy eating the tahini frosting from the bowl while piping!  The inspiration for the combination of nutella and tahini was simple. I remembered eating peanut cookies during Chinese New Year and loved the small sprinkles of sesames on top.


On this occasion i decided to replace peanuts by using nutella and i couldn't be more pleased. The sesame tahini gives this frosting a creamy smooth texture while nutella inside the cupcake simply makes me smile!


Items you need:


Batter

- 3 tablespoons of nutella
- 2 teaspoons of baking powder
- 1/12 cups of sifted plain flour
- 2 eggs
- 110 grams of butter
- 1/4 cup of milk
- 1/2 cup of caster sugar

Tahini Frosting

- 110 grams of softened butter
- 2 tablespoons of thickened cream
- 1/2 a tablespoon of tahini
- 4 cups of icing sugar

What's Next?

1. Preheat the oven to 180 degrees Celsius (356 Fahrenheit)

2. Using the electric mixer, combine the butter and sugar. When the mixture has creamed add the eggs individually and beat together.

3. Add the sifted flour and baking powder in batches and mix well.

4. Add milk till the batter reaches a smoother consistency

5. Stir in one tablespoon of nutella in to the batter.

6. Place cupcake casings in to the cupcake tins and spoon the mixture till it reaches halfway of the casings. Using a teaspoon place a dollop on each cupcake and top with another scoop of nutella batter.

7. Place in the oven and bake for 30 minutes or until a skewer inserted comes out clean


Tahini Frosting

1. Place butter in a mixing bowl and add one cup of icing sugar. With an electric mixer whip the butter and continue to add icing one cup at a time ensuring to beat well after each cup.

2. Add the cream and continue whipping till fluffy

3. Add 1/2 tablespoon of tahini and continue to mix till blended well.
