Malibu cupcakes with white cloud frosting

When i first saw this frosting on i knew i had to try it!

Originated from her friend Melissa at this fluffy bite of heaven has converted me from butter cream for life.

My baby girl is turning one in a month and finding original cupcakes to celebrate can be a challenge. I wanted to create a cupcake that has less sugar than store bought but still has enough flavour to keep guests coming back for more. 

I decided to put together a Malibu cupcake. The name itself reminds me of sunny days and splice ice cream with a coconut filling, hence a Malibu cupcake with pineapple, coconut and banana was born. Admittedly, i had two shots at the recipe but managed to perfect it on the third go.

The result? A fluffy splice of sunshine in your mouth! 

Items you need:

- 100g of unsalted butter (0.22lb)
- 1/2 cup of dessicated coconut
- 2 eggs
- 2 teaspoons of baking powder
- 1/2 a cup of crushed pineapple (keep 1 teaspoon of the juice)
- 1/2 a cup of granulated sugar
- 1/4 of a banana mashed
-1 1/2 cups of plain flour

White Cloud Frosting

See below. Instead of using vanilla essence i substituted it with coconut essence

What's Next?

Preheat the oven to 180 degrees celsius (356 Fahrenheit)

1. Beat the butter and sugar together till creamy

2. Add each egg and beat thoroughly

3. In a seperate bowl sift the plain flour and baking powder.

4. Add the flour mixture in batches to the batter mixture and stir through thoroughly

5. Fold in the banana, coconut and pineapple to the batter.

6. Pour in to a 12 hole muffin tin and bake for 15-20 minutes

7. Remove from the oven and once cooled, pipe the white cloud frosting
