Cauliflower and Potato Puree

Mid week can be a struggle when it comes to dinner ideas. I have my 'go to' recipes for quick and easy meals and this Cauliflower and Potato Puree is definitely one of them.

This simple puree is perfect to freeze and is a great addition to any meat dish. While i love a potato mash, the cauliflower somehow gives it a lovely touch for something different and the mixed spice brings the whole puree to life.

It's definitely worth a try and feel free to create your own version.

Items you need:

- 1 potato diced
- 1 cup of diced cauliflower
- 1 teaspoon of butter
- 1 teaspoon of mixed spice

What's next?

1. Place the potato and cauliflower in a pot of boiling water for 20 minutes.

2. Strain and use a hand held blender to puree.

3. Add the butter and whizz through

4. Serve immediately with a sprinkle of the mixed spice
