Apple and pistachio muffins

When my mum sent me to the babysitters i always anticipated the arrival of the 'snack' man.  He would carry a basket on his shoulders from door to door selling chickpeas, peanuts and pistachios.

I would wait at the gate and remember the unforgiving Malaysian heat beating down on the pavement. Then pass the bushes appeared the 'snack' man! My sitter bought us a cone with the mixed nuts and i remembered digging to the bottom for the salted chickpeas. You can say that pistachios were never my first love!


Fast forward 20 years later and i can't imagine a nut mix without pistachios. It's delicious and can bring out the flavour of any sweet and savory.


I decided to combine shredded apple and pistachios together, similar to the flavours of the Turkish delights i ate during my travels in Istanbul. The result? A nutty melt in your mouth muffin with an apple tang.


 
Items you need:

- 1 large apple peeled and grated (on the larger grate)
- 50g of pistachios (grounded or place in a small food processor for a powdery result)
- 150 g of butter at room temperature
- 1/2 cup of granulated sugar
- 3 eggs
- 1 cup of sifted plain flour
- 2 tsp. of baking powder


What's Next?

Preheat the oven to 180 degrees celsius (356 fahrenheit)

1. Cream the butter and sugar together with a hand held mixer

2. Add the eggs one by one and mix through

3. Add the plain flour and baking powder in batches and fold through.

4. Stir through the grated apple and pistachios

5. Place in the oven to bake for 20-30 minutes. Be sure to check the muffins, using a skewer to see if the middle is gooey. If so, return it back to the oven for another 5-10 minutes.
