Layered smoked trout salad

Picnics can be messy which is why i have decided to create a special 'picnic' themed post for those who love dining outdoors.

I will start with my layered smoked trout salad which is light, easy and most of all quick for those pressed for time.

Items you need:
- A handful of sweet baby tomatoes (mixed coloured tomatoes add a gorgeous vibrancy to the salad)
- 1 whole avacado halved and diced
- 1 Tbsp of lemon rind
- 1/2 a smoke trout flaked and bones removed ( you can buy smoked trout from your local grocer)
- 1 cup of corn cous cous cooked (read packaging for cooking instructions)
- 1 tbsp of chopped chives/ dill
- 1 pink shallot sliced thinly
- 1 tsp of creme freche

What's Next?

1. Place the corn cous cous in a mixing bowl and add the chopped chives/dill and the lemon rind. Place    the smoke trout flakes and slowly fold in together

2. Place 2-3 tbsp of the cous cous mixture in to a mason jar

3. Add the diced tomatoes and avacado then top it with a dollop of the creme freche (optional)
