Jerk Chicken with apple and cucumber raita

During my travels in London i came across a very unique chain food store called 'Jerk chicken'. My encounter with jerk happened on a freezing, wet day in London. My shoes were soaked, i had locked myself out of my apartment and had 5 pounds.


The eatery seemed warm with simple tables and slightly shabby chairs but the smell of spices was inviting enough! I ordered the chicken combo which consisted of barbecued jerk spiced chicken, coconut rice and beans- it was delicious and is one of the great eats i miss from the big smoke.



The term 'jerk' is a Jamaican spice rub and particular technique used to marinate meats such as chicken and seafood. History has it that the jerk sauce originated from Africa and was modified overtime with different cultural influences. I have added my own modification with reduced heat and a hint of paprika as opposed to the thyme which is commonly used in Jerk sauces. As a condiment i have modified the traditional indian yoghurt and have added apple for a sweet tang.




Items you need:

Jerk Sauce
- 1 red anaheim or bullhorn chillie
- 1 red onion
- 1 tbsp of paprika
- 1 tbsp of all spice
- 1 tsp of cumin
- 1 tsp of nutmeg
- 1 tbsp of grated ginger
- 2 tsp of brown sugar
- 1 tbsp of grated lime zest
- 3 sprigs of spring onions
- 2 tbsp olive oil - 1 kg (2lbs) of mixed chicken portions (wings, drumstick, thigh fillets)

Cucumber and Apple Raita
 
- 1/2 a cucumber, grated
- 1/2 a cooking apple, grated
- 1 tbsp of salt
- 100 grams (0.22lbs) of greek yoghurt
- 1 tsp of ground black pepper
- 1 tsp of cumin powder

What's next?
 
1. Aside from the chicken portions, add all the ingredients into a food processor and blend well.

2. Pour the sauce over the chicken portions and rub well. Then leave in the fridge for a min of 3 hours for the flavours to marinade in.

3. Place it in the oven at 180 degrees celsius (365 Farenheit). Cook till golden and slightly burnt

Cucumber and Apple Raita

1. Place the cucumber in a mixing bowl and add a tablespoon of salt. The salt will extract juice from the cucumber which you will squeeze and discard.
2. Add the grated apple, greek yoghurt, pepper, cumin and mix well.

3. Serve immediately with the jerk chicken and your favourite bread. I chose pita.
